Ingredients

1 (16 ounce) package lasagna noodles

1 (10 ounce) package frozen chopped spinach

3 cooked, boneless chicken breast halves, diced

2 (16 ounce) jars Alfredo-style pasta sauce

4 cups shredded mozzarella cheese

2 pints ricotta cheese

salt and ground black pepper to taste

Direction

Preheat the oven at 350°F (175°C).

Let a big pot of water with a little bit of salt boil. Put the lasagna noodles in the boiling salted water and cook for 8-10 minutes until al dente then drain the noodles. Follow the package instructions in cooking the frozen spinach then drain excess liquid.

Mix 1 jar of Alfredo sauce and chicken together in a medium-sized bowl. In another bowl, mix cooked spinach and ricotta cheese.

In a 13x9-inch baking dish, put a layer of lasagna noodles at the bottom letting it overlap to fit. Evenly spread the chicken-Alfredo sauce mixture on top of the noodles. Put 1 cup of shredded mozzarella cheese on top. Put in another layer of lasagna noodles. Put the spinach mixture evenly on top of the second lasagna layer. Put in 1/2 of the remaining jar of Alfredo sauce evenly on top. Put 1 cup of mozzarella cheese and top with the final layer of lasagna noodles, remaining 1/2 jar of the Alfredo sauce and 2 cups of mozzarella cheese, season with pepper and salt.

Put in the preheated oven and bake for 50-60 minutes or until the sauce is boiling and the top is browned.
